I grew up in Texas with a Prohibitionist father and an alcoholic brother. But I’ve spent 40 years in France and a few years in Italy where I developed an appreciation of how wine is consumed. It’s absolutely shocking to me when Americans show up and show no respect for food/wine combinations or quantity drunk. It barbaric. They seem to just want the alcohol content and don’t even notice the chemistry of the wine with the right or wrong foods or of it’s interaction with your body and mental state. The spiritual qualities of wine are invisible to them.
